Strawberry jam sandwiched between two lemon seed and spice cookies. I soft baked the cookies so they were nice and chewy. 
Lemon seed and spice cookies
-Mash 1/2 cup of Earth Balance with 1/2 cup of white sugar. Cream until fluffy. Add 1 tsp of vanilla extract and 1 egg. Beat well. Add one more (large) egg and beat well. Then add 1 tsp of poppy seeds, 2 tsp of sesame seeds, 1 tsp grated lemon zest, 1/2 tsp cinnamon, and 1 tsp ground ginger. Mix well. 
- Add in 1/2 cup of all purpose flour and mix until well combined. Then add in another 3/4 cup of all purpose flour, 1/2 tsp of baking soda, 1 tsp of baking powder, and a pinch of salt. Mix until well combined. 
- Heat oven to 375F. Use a spoon to grab clumps of dough and roll them into little balls. Place them on the baking tray about an inch apart. Squish them down with the heel of your hand to make flattened discs. The dough is pretty sticky, so you may need to wet your hand a bit first. 
- Bake for 8 - 10 minutes for 1 inch clumps of dough (or larger). They should still be a bit soft when you remove them from the oven. Let the cookies cool.
- When cooled completely, match them up in pairs. Spread your favorite jam on one cookie, them place the other cookie on top to make a sandwich. 
These are really nice dipped in tea or coffee
